Aug 27: puffed quinoa pb balls

Hey there oh seekers of optimal fitness ;)

I’m always on the lookout for yummy recipes that will help me get through my afternoon slump. Jamie Eason’s Pumpkin Protein Bars are easily my favourite so far. I modified Damy’s Blueberry Protein Bars and quite like them. I’ve also made protein peanut butter balls – using various recipes – and enjoy them as well.

This time I came across vegangela’s Puffed Quinoa PB Balls and decided to make a few modifications and see how they worked out.

Here are my ingredients and measurements: (I doubled the recipe)

  •  2 C  puffed quinoa
  • 1 1/2 C  natural crunchy pb
  • 2 tbsp  xylitol (as I didn’t have agave nectar)
  • 1 tsp  cinnamon
  • 2 tsp  vanilla
  • 2 scoops  soy protein powder
  • 2 tbsp  dark chocolate granola

The last pic is me.. exhausted after trying to form the little suckers into balls. Hence all the wee tupperware containers.. I finally gave up after awhile!!

Here’s why I think they didn’t quite work:

  • Not only did I substitute a dry sweetener for a wet one
  • I also added another couple dry ingredients – protein powder and granola

I increased the amount of peanut butter to compensate, but clearly not enough. So while they taste DELICIOUS, (no seriously, they’re awesome) they didn’t quite happen the way I’d hoped.

My suggestion? Definitely keep the protein powder so as to give them a bit more oomph for your afternoon snack. But stick with a wet sweetener like honey or agave nectar so that they stick together nicely for you.

Definitely worth a try!!

I did a rough nutritional breakdown with my ingredients. 
The recipe yielded approx 24 balls making each ball worth:
  • 158 Calories
  • 8.3 fat
  • 14.4 carbs
  • 2.6 fiber
  • 1.1 sugar
  • 7.6 protein

omg, they look so good (ok, to be honest, I mean the “original” ones from vegangela ;) ), but I don’t know where to buy puffed quinoa in stores here.. Hm, maybe I can purchase them online..

HEY! Are you dis’ing my quinoa balls??! hahaha Yah, no worries ;)
I found the puffed quinoa at an organic health food store. Just about anything can be purchased online these days too though.
Another great quick way to enjoy the puffed quinoa is to add it to some yoghurt with berries.. YUM! Packs a punch!!

I found puffed Amaranth in my grocery store and looking at the nutrients it seems almost to be equal in carbs and protein, so maybe I try it with this. I’ll let you (and the BRers) know the results (oh oh..) :)

Yah.. those silly dry ingredients messed everything up.. but they still tasted terrific :D
